Ray / Skate
Ray or skate wing is traditionally popular in the takeaways in Dublin but here in Cork we love it for its strength and character of flavour. Ray wing is a really economical fish choice and delivers a good quantity of meat which is easily accessed. Being a really ancient species the wings you buy are made up of a cartilage which runs in the center of the flesh rather than your traditional bone, this means no fish bones! When you are eating the fish you slide the flesh off either side of the cartilage there are no fiddle bones and the flavor is just fantastic.
Great fried with butter and capers, great eating, extraordinary flavour.
